2021 lucy m... la sarriette pinot blanc

the farm: robert surmann’s vineyard in totness with 30 y/o vines grown on black sandy soil overlying petrified schist, it is V.S.P. trained and spur pruned.

how the wine was made: the fruit is whole bunch pressed and fermented in a 2000 litre foudre and aged on lees. the wine is only the free run fraction. 

notes: she arrives lean, savoury, tight, mineral, austere, then her true pinot blanc nature explodes to velour textured honeysuckle and wild lavender.

2021 lucy m... le vilain gris pétillant naturel

variety: 100% pinot gris

the farm: robert surmann’s vineyard in totness with 30 y/o vines grown on black sandy soil overlying petrified schist, it is V.S.P. trained and spur pruned.

how the wine was made: the grapes are destemmed and left to rest for 4 days allowing juice to soak up the flavour, colour and a little tannin from the skins. it is then pressed into a 680L ceramic eggs and fermented for two weeks until there is the perfect amount of sugar to finish in bottle with a good level of spritz. then it is aged on lees in bottle for five months and then disgorged.

notes: a salmon colour with gentle crystal water flowing over gravel pebbles bubbling over your tongue. it has a delicate palate of fresh strawberries and white peach. sooo fun!

varieties: pinot gris 50%, sémillon 50%

the farms: the gris is from robert surmann’s vineyard in totness with 30 y/o
pinot gris grown on black sandy soil overlying petrified schist, it is V.S.P. trained and spur pruned.

the sémillon is from magpie springs farm in the hope forest. it has sand soil and is at the top of a hill near the ocean with strong ocean breezes sometimes. the vines are 25 years old, unmanicured and wild farmed.

how the wine was made: the sémillon was destemmed and sealed for one month in a stainless enox. the gris was the saignée of destemmed fruit. this light pretty clear juice was added to the sémillon and then pressed and the free run juice was sealed in enox until bottling.

notes: a slightly cloudy golden hue with a rustic textured beauty. It is a simple peasant wine, but not from poverty, but from honest hard work to be drunk on hand made timber table from trees you felled on your own farm through ceramic cups made in the same light. purity and honesty does not always come from refinement!

the farm: robert surmann’s vineyard in totness with 30 y/o sauvignon blanc grown on black sandy soil overlying petrified schist, it is V.S.P. trained and spur pruned.

how the wine was made: the fruit is destemmed sauvignon blanc, left to soak and start ferment on berries for one month in an 800L ceramic egg, then the berries are removed then pressed and added back.

notes: the wine is slightly cloudy golden colour. a perfumed richness of turkish delight served in a dank cave with beeswax candles flickering gently and enchanting games of chess being played by ‘the in crowd’, lucid fluidity coats and a harmonic rhythm on your tongue.

the farms: the gris is from robert surmann’s vineyard in totness with 30 y/o
vines grown on black sandy soil overlying petrified schist, it is V.S.P. trained and
spur pruned. The sémillon is from magpie springs farm in the hope valley. it has sand soil and is at the top of a hill near the ocean with strong ocean breezes sometimes. the vines are 25 years old, unmanicured and wild farmed. the sauvignon blanc is V.S.P. trained and spur pruned.

how the wine was made: a ménage à trois, with three varieties, dwelling in the bottle together. A form of polyamory, contemporary arrangements are sometimes identified as a throuple, thruple, or triad. each of the varieties spent many months on skin before cohabiting in the bottle where they express their exuberance every time the cork is popped.

notes: clean fresh salty ocean air, waves crashing against volcanic rocks and the alluring scent of a tropical forest. that hugs the shoreline. she tastes of exotic sweet guava, pomegranate and lichee, in intoxicating atmosphere leads to heavy breathing in the shimmering into the sunset.

vrieties: chardonnay 36%, sémillon 30%, pinot gris 30%, sangiovese 4%

the farms: the chardonnay is from the ‘cemetery block’ is at the base of the piccadilly valley on alluvial black sandy soil, the vines are cane pruned. this farm is run by jenny and james griggs who are the 6th generation to farm that block. the sémillon is from magpie springs farm in the hope forest. it has sand soil and is at the top of a hill near the ocean with strong ocean breezes sometimes. the vines are 25 years old, unmanicured and wild farmed. the pinot gris and sangiovese is robert surmann’s vineyard in totness with 30 y/o vines grown on black sandy soil overlying petrified schist, it is V.S.P. trained and spur pruned.

how the wine was made: this as an assemblage of lost children, the pressing component of our best chardonnay aged in oak, the pressings component of the sémillon the spent on month on skins, the gris was saignéed and (this is the hard core component) then spent 2 months on skins, the sangiovese is added to bring a kiss of life to the wine and was carbonic fermented of 5 days and stored in enox.

notes: pink hues through the luminescent rose gold, giving rising to wild orchards and heritage roses. they flower elegantly on the backyard fence while violets play in the beds. the perfumed delicately blooms into the atmospheres capturing negative space, building beautiful feelings.
